When I think “fall,” I envision produce like pumpkins, root vegetables, squash, apples, and pears. My mind goes to warm spices, cinnamon, and the sweetness of caramel, maple, and cider. While so much is different this year, there’s something about the familiar flavors of fall that bring a sense of comfort and keep crisp autumn days festive. As a Registered Dietitian, I’m a big believer in incorporating seasonal foods to make meals more flavorful and nutritious at affordable prices, and these Roasted Brussel Sprouts with Apples, Cranberries, and Pecans pair perfectly with the salmon for a nourishing autumn dinner. Maple Glazed Fresh Atlantic Salmon & Butternut Squash Ravioli

with Brown Butter Sauce

INGREDIENTS

1 Tbsp Chili Powder

1 Tbsp Paprika

2 tsp Brown Sugar

½ tsp Kosher Salt

1 ½ lbs Fresh Atlantic Salmon fillets

¼ cup Maple Syrup

2 packages Priano Butternut Squash Ravioli

½ cup Butter, cut into tablespoons

Pepitas or chopped pecans (optional)

DIRECTIONS

1.    Preheat oven to broil. Line a rimmed baking sheet with aluminum foil and spray with cooking spray. Place salmon on baking sheet.

2.   Bring 4 quarts of salted water to a boil.

3.   In a small bowl, mix together the chili powder, paprika, sugar, and salt. Generously sprinkle the chili powder mixture over the salmon fillets.

4.   For the brown butter sauce: Heat a small, thick-bottomed skillet or pan over medium heat. Add the butter, whisking frequently. Once melted, butter will foam up a bit, then subside. Watch carefully as lightly browned specks begin to form at the bottom of the pan. Butter should have a nutty aroma. Remove from heat and pour into separate bowl to stop cooking furtherand prevent burning. Set aside.

5.  Broil salmon until the internal temperature reaches 135°F - 140°F (6-9 minutes). Note: Cooking time will vary depending on the thickness of your fillets and how crispy you prefer your crust.

6.  Meanwhile, cook ravioli according to package instructions.

7.   Remove salmon from the oven and brush the maple syrup over the tops to coat. Return to the oven and broil 1-2 minutes, until the maple syrup is bubbling and has formed a crust. 

8.   Place ravioli on plate and top with salmon and brown butter sauce. Garnish with pepitas or pecans, if desired. Serve immediately.

 


 

Roasted Brussel Sprouts with Apples, Cranberries, & Pecans

INGREDIENTS

Brussel sprouts, halved or quartered (depending on size)

Apples, peeled and chopped

Olive Oil

Salt & Pepper, to taste

Dried cranberries

Chopped Pecans

DIRECTIONS

1.    Preheat oven to 425 degrees F. Line a large baking sheet with aluminum foil or parchment paper.

2.   Place Brussels sprouts and apples on prepared baking sheet. Generously drizzle with the olive oil and sprinkle with the salt and pepper; toss to coat.

3.   Place in the oven and cook for 15-20 minutes, until Brussel sprouts are beginning to brown.

4.   Stir in cranberries and pecans, and place back in the oven for another 5-10 minutes until the Brussels sprouts are crisp-tender and lightly charred.

5.  Serve warm and enjoy!
